Farro is one of those old grains that’s enjoying a resurgence because of its very low gluten content. Even folks that are intolerant to gluten are known to enjoy farro without any drawbacks.
Aside from its health benefits (and there are others) this couscous has great flavor and is really easy to prepare. Serve as a bed for fish or roasted root vegetables. Great for making cold pasta salads or when you're in the mood for simple, rustic fare.
