Historically, Ethiopia's southern Sidamo province has long been known for its coffee—in fact, it's believed to be the origin of the world's first coffee trees. Today, all coffee beans grown across the world, from Central America to Papua New Guinea, are the result of European colonizers planting trees with Ethiopian heritage. The genetic diversity of coffee trees in Ethiopia is astounding—it's estimated there are between six and ten thousand heirloom coffee varietals growing there today. Just imagine if French wines were made not just with the handful of common grape varietals we know like Chardonnay and Merlot, but from thousands of different kinds of grapes!

Despite all the genetic diversity, coffees from the Sidamo region tend to have a consistent flavor profile. They're generally bright and juicy, with sweet, fruity notes and a mouthwatering acidity. This coffee, grown between 1,700 and 2,000 meters above sea level around the town of Yirgacheffe, fits the profile. It's delicate with a citrusy brightness. The bright flavors are best accentuated with a brewing method like a French press or a Chemex pourover—one that doesn't let a paper filter come between the grounds and the brew (which separates the aromatic oils in the beans from the coffee you drink).
