From Rick's Picks in New York come the best pickled beets I've tasted, bar none. Each jar holds fat slices of deep, garnet red beets suspended in a maroon, almost black brine. The flavor starts with the sweet, earthiness of the beets, enhanced with a bit of brown sugar. Then it builds with warm spices: cinnamon, allspice, cloves, ginger. Then comes a slight acidity from the cider vinegar and lemon juice. 

Eat them alongside crumbles of fresh goat cheese on a rockin' summer salad or atop crusty bread. Chop them up and toss them into thick, tangy yogurt for a quick, flavorful dip for veggies or crackers.
