Blackcurrant Blighty Preserves

Sky Cracknell and Kai Knutsen started England Preserves in London in 2001, making high quality jams in their kitchen from local produce and selling them at farmer's markets. They shopped at Neal's Yard Dairy all the time and they loved the seasonal fruit NYD would sell from small growers in the area. They started up a conversation and in the end, NYD introduced Sky and Kai to Brogdale, an area in Kent, England, just outside of London, that was known as the fruit producer of the kingdom.
 
The small hamlet boasts more than 4,000 varieties of fruit, from apples you've never heard of to stone fruits that were in fashion in the 1700s, but not so much today. Sky and Kai fell in love with the heirloom fruits they found there. Their vision changed from just making preserves to creating flavors and products that highlighted these obscure, but delicious, heirloom fruits.
 
These blackcurrants fit the bill. Their flavor is far more complex than most preserves. This one, for instance, has far more tart character than you might find in most preserves. It's almost a sweet/sour experience or, as the Italian's call it: agrodolce. They use just enough pectin to hold it all together, but the fruit is the true star of the jar.
 
Enjoy this preserve with richer flavors and dishes or pastries. I first had some on a butter croissant and it was awesome. The tart notes really cut through the buttery flavor. It also has a savory note that makes it a nice match for grilled meats.
