The Noto almond from Sicily is an heirloom variety renowned for its sweet, buttery flavor and penetrating fragrance. They’re great straight, but they bring an added nuance to sauces like this one made with sweet peppers and olive oil from the same region.
This sauce goes into my “long flavor hike” category, meaning there’s a whole lot going on, but in series, not concert. The first flavor is sweet pepper, then it’s nutty and creamy, then the pepper comes back and it gets a little savory, then bright, and it all ends with the slightest amount of heat and your lips tingle just a little. The trip is so good, you'll go back to the beginning and do it again.
It’s easy to get creative with this sauce and it pairs really well with fresh goat cheese and some good crusty bread.
