Absinthe Orange Deliciousness

So good you could go insane...or maybe that's just the absinthe

Maura Gramzinski and her crew in Denver, Colorado make all kinds of preserves, conserves, and jams. She calls them "deliciousnesses." She only uses fruit when it’s in season and keep most of their sourcing to one region of the country. The organic oranges and lemons used in this jar are from California.
 
The source of the absinthe is just as important as the fruit. “I want everything about Deliciousness to be specific to Colorado.” Maura explained. “So I chose Absinthe Verte from Leopold Brothers in Denver.” (Leopold Brothers actually started brewing beer and spirits in Ann Arbor years ago before moving to Denver.)
 
“It’s amazing to see how much care they put into every aspect of distilling and brewing.” Maura continued. “It was exactly the type of folks and absinthe I wanted to work with.”
 
Maura starts with whole fresh fruit, blanches them, and then chops them up. (“Lots of chopping,” she says.) They use fresh vanilla beans from Madagascar, whole anise seed, cane sugar, non-gmo pectin, and good old Colorado water. They cook everything as short a time as allowed because they believe it lets the more delicate, fresh flavors come through. Finally comes a big splash of absinthe and then it’s into the jar. The whole endeavor takes about four hours from start to finish. And that’s making ten gallons at a time.
 
Mix Deliciousness into your morning yogurt or oatmeal or even over pancakes. It’s great poured over ice cream and even works as a glaze for chicken. Great with cheese, especially goat cheese. Maura tells me you can make some pretty interesting cocktails with this and some bourbon.
