Amarena Cherries in Chocolate

Amarenas are small, dark, wild cherries from central Italy. Locals have long loved them for their deep, full cherry flavor. When they're fresh they can be a tad bitter—amaro means bitter in Italian—but traditionally they're preserved in syrup which brings out their earthy sweetness. Then the plump candied cherries are used year round to top ice cream, to bake into cakes and pies, or to garnish cocktails. 

Now Joan Cuokos, the chocolate genius behind Chocolat Moderne in New York City, has taken amarena cherries to the next level by infusing them in a boozy Absolut vodka-infused syrup and encasing them in dark chocolate. Biting into one is a treat: after the chocolate shell snaps between your teeth, you hit the pop of the cherry and the silky, sweet-tart syrup which, if you're not careful, will drip down your fingers.
