Break on through to the other side.

This chili oil from Blank Slate Kitchen in New York blew me away the first time I tasted it. I was so impressed that we featured it in a recent installment of our Food Explorer's Club even though I don't usually feature such spicy things. 
 
The older I get the more I appreciate adding a touch of heat to my dishes, especially in a cuisine that's rich. The complex spice and heat makes your taste buds stand up and take notice. If you're eating something buttery that coats your tongue with that lusciousness, the spiciness will cause your taste buds to "push through" the layer of fat on your tongue so you can taste the complexity of all the other ingredients. 
 
This oil gets its heat and complexity from an infusion of a dozen spices and herbs, including two types of ground chilis and a healthy dose of lemony, mouth-tingling Szechuan peppercorns. 
 
In short: use this stuff all over the place. Use it lightly, but use it. An oil this can be a revelation.
