Traditionally, raclette is a Swiss cheese made with cow’s milk and served melty and gooey with bread. This lovely edition is made from sheep’s milk, which adds a bright complexity to the smooth, rich, slightly nutty flavor.

Using the raw milk of Basco-Bernaise sheep from two local farmers around the town of Val de Bagnes in the Swiss Alps, cheesemakers Yan Sutterlin and Bertrand Gabioud create wheels of raclette in their dairy and age the wheels for about four months in their cheese caves. Many folks have heard of raclette, few have enjoyed a raclette this unique.
