Idyllweiss is made at Idyll Farms Farmstead Goat Creamery in northern Michigan. Idyll Farms keeps a herd of pasture-raised Alpine goats that graze on the hills overlooking Lake Michigan. Most of the year, while the goats give milk, they use that milk to make a collection of handcrafted cheeses.
To make this cheese, they combine their goat's milk with a bit of local grass-fed cow's milk. As it ages it develops a bloomy, wrinkly rind and a bright and buttery flavor with lovely citrus notes and ultra creamy texture.
