This cheese has a really big flavor, a gentle fruitiness, a marvelous, mouth-watering finish and a very buttery, creamy texture. I think it's full flavored enough to appeal to the most discriminating cheese eaters yet still gentle enough to please a pack of novices.
It's a great cheese for eating on its own, but it's also excellent for grilled cheese sandwiches, tossing into salads or grating on to just-cooked macaroni for a quick dinner. I think you'll find it's one of the most wonderfully versatile, full flavored artisan cheeses around.
