Goat’s milk cheeses run the gamut of flavors, but when most of us hear the term one type comes to mind: soft, earthy, citrusy cheese. We don’t lump all cow’s milk cheeses into one flavor category. Why are we so cavalier with goats? In part, it's because goats produce a lot less milk than cows, so it takes the milk of a lot more goats to have enough to make cheeses big enough to age for a long time. Goat's milk also has smaller proteins and fats, which allow them to age more quickly than cow's milk cheeses. But in the hands of a skilled cheesemaker, goat's milk cheeses can be made in any number of styles for any number of results. Here are a few of our favorites.
