Practically all bacon—not to mention cheese, fish, and many other “smoked” foods—are not actually smoked at all, but doused in a dose of liquid smoke. Liquid smoke is to real smoked foods as instant coffee is to a cup of proper brewed coffee: it hits the same basic notes, but lacks all of the nuance and character of the real deal. Liquid smoke is much quicker and much cheaper than slow smoking, but it will never impart the same sweetness as applewood logs, or the same intensity as hickory. Don’t take my word for it.
