Zingerman's Bakehouse mills many of their grains in house on their own granite mill. That allows the bakers to work with freshly milled, truly whole-grain flours. Most whole grain flours are actually milled like regular flours, separating the white flour from the rest of the grain and then adding some of the bran back in. But in our case, we never remove any part of the grain, so all of the flavor and nutrition stays intact.
