Why have more than one Parmigiano Reggiano? Because not all wheels are the same.

There are over 300 dairies making Parmigiano Reggiano across an area the size of Connecticut. The cheese is made all year long, during biting cold and torpid heat. The cows live in lush valleys and high in the mountains. Some cheesemakers produce five wheels a day. Some make a hundred. In spite of being called by one name, it is not one interchangeable cheese. We spent a year visiting dairies, tasting dozens and dozens of cheeses. (I know, rough job, right?) We’ve settled on cheeses that we think show something really different and special about what for many—me included—is one of the greatest cheeses in the world.
