Brain teaser for a creative chef.
For the creative licorice-loving soul in your kitchen. You probably won't find dozens of ways to use this in your evening meals by trolling the internet or the Food Network. But that shouldn’t stop you from trying it. Made with licorice, sugars and apple – which serves as juice and thickener with its natural pectin – this jam's got a toasty, savory, date-like flavor that’s not very sweet.
It’s spreadable and it’s got me thinking. Licorice on roasted apples? Licorice on coffee ice cream? PB & Licorice sandwich? Hmmm.
A friend of mine had it served for dessert over little quenelles of fresh ricotta in Sicily.
