Allen Leibowitz is the founder and roastmaster of Zingerman's Coffee Company. When we asked him about his favorite product, here's what he had to say:
The first thing I've done every morning for the last twenty years is turn on the espresso machine. I enjoy savoring the rich, silky body that only espresso has offer. The tiny mesh of aromatic bubbles—the crema—coats my tongue releasing aromatic compounds as they burst. An espresso should have a balance of sweet and bitter and should be a pleasure to drink by itself. It should be complex, smooth and superbly balanced. To achieve this, the type of coffee beans have to be chosen and roasted to bring out these characteristics. Making an espresso will amplify whatever is going on with the beans. If the beans are super bright and lively they will probably make an unpleasantly acidic espresso.
Zingerman’s Espresso Blend #1 is crafted to accentuate sweetness and body with refined notes of nuts (think hazelnut or roasted Spanish peanuts). A two ounce “double shot” can be slowly sipped, lasting as long and being as satisfying as a bigger cup of filter brewed. It is also my go-to coffee when I feel like making a pot of filter brewed coffee. As a drip, I love the sweetness and the smoothness. If I’m going to drink most of a pot on a weekend morning, this is what I want. I do love lots of other coffees for lots of reasons; don’t get me wrong. If I didn't I wouldn't have started a coffee business. But this is my true love, I always circle back to it.
