From Germany, Bergkäse is made by hand with raw milk during the summer only, when the cows are high in the mountains eating from unplowed pastures. We get special batches, aged for over a year, when it gets a firm texture akin to Gruyère.
Its flavor is forward, well balanced, very big, nutty, earthy and complex with a really long finish. Outstanding.
