They'd grow the herbs in their gardens or gather them in the countryside, then use them fresh or dry them for year round use.

Mustard maker Elie-Arnaud Denoix has mixed those dried herbs into his mustard to create a creamy, bright, herbal condiment. It's tangy without too much spicy bite so you can go to town adding it to vinaigrettes, on roasted vegetables, spread on fish, or stirred into scrambled eggs.
