Coffee grown at higher altitudes tends to have more complex flavor than that grown closer to sea level. There are a number of reasons why, some of which we know, some of which we don't. The beans grow slower which seems to concentrate flavor. The coffee made at the Pitalito Mill is grown on hills ranging from 3,000 to 5,000 feet in the Huila district in southern Colombia. That's high enough to make for a pretty interesting bean. On top of that, Roastmaster Allen turns the heat low, lightly roasting the delicate beans so the complexity of their flavor isn’t burned to a char.
