Where the smaller buds are very floral and pop on the tongue, larger buds taste more vegetal, with a slight floral character and chewier texture. 

While most capers are relegated to being garnish, these are large enough to make an impact in a dish. Toss them in pasta with olive oil, lemon juice and a tin of tuna. Mix into sauces of all sorts or lay over fish before going into the oven. The briney, slightly floral flavors work in all manner of dishes so get creative.
