A bigger caper for bigger dishes.
These are some of the larger capers you can find.
Most of us know the little tiny flower buds of the caper plant, but there are a whole range of sizes to choose from, each with a slightly different flavor and texture. Where the smaller buds are very floral and pop on the tongue, larger buds taste more vegetal, with a slight floral character and chewier texture.
While most capers are relegated to being garnish, these are large enough to make an impact in a dish. Toss them in pasta with olive oil, lemon juice and a tin of tuna. Mix into sauces of all sorts or lay over fish before going into the oven. The briney, slightly floral flavors work in all manner of dishes so get creative.
