This is THE Christmas treat in Spain. The ingredients are simple. Ground Marcona almonds, egg yolks and sugar. The packaging is simple, too: just a plain, clear wrapper.
But there's nothing simple about its flavor. In large part that has to do with the almonds. Marconas are hugely flavorful on their own. The burnt sugar complements them nicely: the outside of the turron is lightly toasted a dark amber, the sugar caramelized and complexly flavored. Texturally, it's reminiscent of marzipan, the almond sweet from central Europe. Dense yet soft and chewy, with the yolks adding only the slightest hint of egg. If you stop by to visit a neighbor in Barcelona you'd probably be offered a bit of turron with a glass of Cava.
