The tradition of growing cacao and enjoying chocolate goes back thousands of years in Soconusco (soe-coe-new-sko), Mexico. In fact, part of the reason the Aztecs took over the region from the Maya was because they craved a steady supply of its excellent cacao.

Shawn Askinosie and his team have spent the last year working with Soconusco cacao as well as beans from San Jose Del Tambo, Ecuador (where the Nibble Bar has added roasted cocoa nibs).
