Made by Liam Callahan in Sonoma. Carmody is a simple cheese, in the best sense of the word.
Inspired by the never-exported "people's cheese" of Lombardy, Italy, where Liam fell for the direct, easy-to-enjoy flavors of the wheels that the cheesemakers fed their own families. Jersey cow's milk, slow-pasteurized, aged for just months. It has a sweet and creamy flavor with zippy buttermilk tang finish. Fun to eat on its own, in sandwiches, or mac and cheese.
Our current wheels, made just after the new year, have savory caramel notes balanced by just the right amount of acidity.
