When we're really lucky, we're able to nab a wheel of amazing summer mountain pasture Beaufort — known as Beaufort d'Alpage — one of the most glorious of all mountain cheeses. Half of the wheel is reserved for Ann Arbor customers. The other half is first come, first served, shipped anywhere in America.
The wheels were made 2,100 meters high in the Alps in Savoie and aged about sixteen months. The flavors of Beaufort are similar to other mountain cheeses like Gruyère and Comté, but if you dialed up the amp to 11. This cheese has flavor that just goes on and on and on.
A piece of Beaufort d’Alpage is about as good as food gets. It will make a spectacular addition to any cheese platter.
