Bavarian mountain cheese.
This is the second German cheese that’s come our way in the last couple years. Like its sister, Bergkase, it’s been a welcome surprise. German cheeses have been a bit of a rarity in America, especially ones this well made. Plus, it’s made by a woman named Evelyn Wild—you can’t beat that.
Adelegger is a classic mountain cheese, firm textured and sweet, with an aromatic edge that comes courtesy of weekly washings with white wine and herbs. Grounded by a meaty, brothy base flavor, this is a multi-octave cheese, aged for almost a year and a half to sharpen its voice, worth trying for all you fans of Gruyère, Appenzeller and Comté.
