Flashback to 1994.
From a makeshift stage in the center of Zingerman’s Deli (known as the “bread box”) I’m selling loaf after loaf of Zingerman’s Bakehouse bread. The craziest flavor, at least to my 18-year-old mind, is Pumpernickel Raisin. I'm too immature to give it a try. Then—poof!—it's gone.
Until the next year or so, when it comes back, baked for a limited time only. I try it. And each year, when it comes back, its flavor gradually grows on me. Now I look forward to it—and it’s coming back soon!
Pumpernickel Raisin is our traditional pumpernickel bread stuffed with huge, juicy Red Flame raisins, finished off with a sprinkle of sesame seeds. The result is a loaf that tastes “adult” . . . deep and rich, almost musty and slightly sweet in a molasses sort of way. Try a few warm slices with your morning coffee or an evening port.
